Migas

A quick and easy Mexican breakfast. Not to be confused with chilaquiles.

Full disclosure, I am American. My ethnicity is Mexican. I did not grow up with a strong sense of Mexican culture. I grew up eating migas. That was what my family always called it, but I didn't know if that was a family thing or a Mexican thing until TikTok (lol). I was following young Mexicans, and one of them made Migas. I was like, "Hey! It's a real thing!" The comments confirmed.


Migas is very simple and basic. All you need is corn tortillas and eggs. I use one corn tortilla to two eggs personally (this is a ratio I like). The reality is that you can toss whatever you have into migas. Have left over carne asada? Toss it in. Onion? Toss it in. Your key ingredients are corn tortillas and eggs.


Step 1: cut or tear your corn tortilla into strips or pieces and fry them in oil.

Step 2: whisk 2 eggs together with a pinch of salt and pepper, and toss them into your pan once your tortillas are a light golden brown or as crispy as you want them.

Step 3: Once your eggs are cooked, plate.

Step 4: Add your toppings.


If you want to add onions or left over meat, add them in before your eggs. Your eggs will be the last thing to cook.


For toppings, I like fresh tomato, avocado, and salsa. Every now and then, I skip those and drizzle with ketchup. So yum. So good!
